  • 50ml Pentire Seaward (available at Waitrose, Harvey Nichols, and pentiredrinks.com)
  • 25ml fresh lime juice
  • 15ml agave syrup
  • 1 pinch dried chilli flakes or 2 slices fresh green chilli
  • 2 tbsp fresh coastal herbs (rock samphire, sea purslane, or thyme as substitute)
  • Sea salt + chilli flakes for rim
  • Ice
  • Lime wheel & sprig of fresh herb to garnish

    Rim — Mix sea salt and chilli flakes on a plate. Wet the rocks glass rim with lime. Dip in salt mix.

    Muddle — In a shaker, lightly muddle herbs with agave syrup.

    Add — Add Pentire Seaward, lime juice, and chilli. Fill with ice.

    Shake — Shake hard for 12 seconds.

    Double strain — Strain into the rimmed rocks glass over ice.

    Garnish — Slide a lime wheel onto the rim and add a small herb sprig.

About This Drink

Pentire is a Cornish brand making non-alcoholic spirits from foraged coastal plants — sea herbs like rock samphire (a peppery, fennel-flavoured plant from the cliffs of Cornwall and India's Konkan coast), sage, and citrus. Pentire Seaward has notes of sea salt, citrus zest, and fresh herbs — it is the most convincing NA tequila substitute currently available in the UK.
