  • 200ml salty lassi base: blend 150g full-fat yogurt + 100ml water + ½ tsp roasted cumin + ½ tsp kala namak + squeeze of lime
  • 100ml dark rum (Old Monk or Mount Gay)
  • 30ml lemon juice (to cause clarification)
  • Large ice cube
  • Roasted cumin pinch & fresh lime wheel to garnish

    Make lassiBlend yogurt, water, roasted cumin, kala namak, and lime. The result is a frothy, savoury salty lassi.

    CombineMix lassi, rum, and lemon juice in a container.

    ClarifyHeat 50ml whole milk to just below boiling. Pour hot milk into the lassi-rum mixture — it will curdle immediately. Leave undisturbed 30 minutes.

    StrainStrain very slowly through muslin or a coffee filter. This takes 2–4 hours. The clear liquid that drips through is your cocktail base. It should be pale gold and smell of cumin-vanilla-yogurt.

    ServePour 120ml of clarified cocktail over a large ice cube in a highball. Garnish with a pinch of roasted cumin and a lime wheel.

About This Cocktail

Saffron Milwaukee built this cocktail around one of the great challenges of cocktail making: how to use yogurt without the drink being cloudy, heavy, or unpleasant. The answer is milk punch clarification applied to lassi: the salted yogurt drink is mixed with the rum and a small amount of citrus, then the acid-heat reaction causes the proteins to precipitate out. Strained slowly through muslin, the result is a crystal-clear golden liquid that tastes intensely of lassi — cumin, salt, yogurt — while looking like an elegant martini. The roasted cumin is the invisible ingredient that makes everything taste more Indian.

This drink requires patience for the clarification but the result is remarkable — a golden, crystal-clear liquid that tastes entirely like a cumin-salty lassi with rum. The clarification removes all cloudiness, astringency, and the yogurt's dairy heaviness while preserving all the flavour compounds. It is best made in large batches as the technique is time-intensive; the clarified base keeps refrigerated for 1 week.
